HOW I MAKE MY 24K GOLD FRIED CHICKEN WINGS | Part I

HEY GUYS! Welcome back to another UNCENSORED EATS cooking video tutorial. On today's menu I will be showing you all how I make my 24K GOLD FRIED CHICKEN WINGS. This is Part 1 to a 3 part video.

RECIPE IS LISTED BELOW:
INGREDIENTS:
1.5 pound Chicken Wings, washed and cleaned
1 Bay leaf, torn
1 inch Gingerroot
1 small bunch Thyme
4 cloves Garlic
1.5 tbsp cup Worcestershire sauce
1/8 tsp Salt + 1/8 for the flour
1/8 tsp Black pepper + 1/8 tsp for the flour
1 tbsp Old Bay Seasoning +1tsp for the flour
1/8 tsp Cayenne pepper
1 tbsp Garlic powder
1 tbsp Onion powder
2 tsp Jamaican All Purpose Seasoning
4 each Allspice Berries


CLEANING and SEASONING CHICKEN WINGS
●Add 1 fresh squeeze lemon saved the rind, 1/4 cup vinegar and 5.5 cups of cold water in a bowl.
●Rinse chicken under cold running water. You always want to rinse chicken first before proceeding with the cleaning process.
●Once the chicken is rinse add it to the lemon and vinegar and water solution and soak for 15 mins. By doing this it will draw out any residual blood and take away the rawness of the chicken .
●After 15 mins drain and rinse chicken under cold running water for 1 min.
●Pat dry chicken with paper towel.
●Seasoning chicken wings with (creole seasoning, old bay seasoning, paprika, mustard powder, black pepper and salt) and let it marinate for 10 mins. This will give the seasoning time to penetrate the wings just a little. (Best if left overnight)


SEASONING PANKO
●Take 1 cups of grated parmesan cheese, 3 tbsp dried parsley place in a food processor and process until the mixture have come together.
●Process the mixture to your liking and texture. Mine is semi fine. Set aside until ready to use

SEASONING FLOUR
●Add cornstarch and flour in a bowl. Add 1/8 tsp salt, 1/8 tsp black pepper and 1 tsp old bay seasoning. Mix together and set aside until ready to use.

EGG WASH
●Whisk eggs in a bowl and set aside until ready to use.

DIRECTIONS:
1. On medium low heat add oil to a pot or deep frying pan. Bring the temperature of the oil to 350° F. (You may need a thermometer).
2. (OPTIONAL) Season oil with 4 allspice berries, ginger root, 4 gloves garlic and bunch of thyme. Let this sit in the oil until the thyme and garlic turns golden brown. Not burnt. Remove from oil.

3. Set up your breading station. Put all in separate bowls:
Flour first
Egg wash second
Panko mix third.

4. Start by dredging the wings in flour. Dusting off the excess flour. Dip in egg wash and then in panko mix. Repeat this process until you have bread each piece of wings. Place wings on a pizza tray or sheet tray line with paper towel. Leave wings on tray to air dry for 10 mins.
5. In the meantime temp the oil to see how far it is. Once the oil hits 350° F. Start by frying the wings in batches. Fry wings for 6 mins.
6. Remove wings from oil and place back on the pizza tray or sheet tray lined with paper towel.
7. Place wings in a 350°F oven to finish cooking and crisp up for 10 mins. Remove from oven and rest for 5 mintues.
8. Watch video carefully to know how to wrap the wings in the gold leaves.
9. Serve with ranch dressing or your favorite dressing or dipping sauce.
